Fond Cyprès is located in Languedoc, near the ancient town of Escales, in the northernmost part of the Corbières AOC. Their domaine begins at the end of a road lined with Cypress trees and extends in either direction across 15ha of lush vegetation, including a secret garden of olives, tomatoes, eggplants, and wild herbs. ~2020 LE CINSAULT ~

The Cinsault Cuve No. 5 is a light and fragrant red which provides an interesting point of contrast to the often bold and high alcohol red wines of the Languedoc. Succulent cherries, sweet plum, and baking spice with delicate structure and refreshing acidity.

~2021 PREMIER JUS ~

An elegant and fun wine, fludily toeing the line somewhere between a light red and a dark rosé. Whole bunches of Carignan were immersed in direct-press Grenache juice, then pressed 2 days later. The result is a wine with great acidity and light body, that is distinctly southern, with a spiciness familiar of Languedoc wines.

~2021 CYPRÈS DE TOI BLANC~

Chardonnay grown on calcareous soil and blue marl in Escales. Fresh juice, with very strong aromatics, it’s food-friendly and easy going, made with grapes sourced from a neighbouring certified organic grower. Traditional vinification:  direct pressing, cold settling and fermentation and aging in a stainless steel tank. No filtration, minimal SO2 added at bottling.

A companion for the warmer months, with notes of Asian pear and granny smith apples conjuring up an imaginary outdoor lunch. Hints of thyme oil, fresh-squeezed lemon and herbes de Provence make the case for a pairing with any meal, really—breakfast through dinner.

Direct pressed Malbec with fun bright red fruit and apple skin followed by subtle sage herbal notes. Fresh acidity and perfect for the outdoors.  Cold soaked and direct pressed into stainless steel tanks for fermet and elevage.

~2019 LE GRENACHE DU BOIS ST JAUME~

This plot is a special place. A section with ample shade, it’s surrounded by woods on 3 sides. Here, are 60-year-old vines. The wine is fermented in concrete and then aged in old Burgundy barrels for 9-10 months.  Herbal qualities from the surrounding garrigue translate seamlessly into the wine.  Elevage is short and gentle, emphasizing savoury qualities within the wine with a complementary velvety texture and long finish. Fermented with indigenous yeasts, no inputs and no filtration.

~2019 LE CARIGNAN DE LA SOURCE~

Sixty-year-old Carignan vines grow on an idyllic parcel abutting their home, at the foot of a fresh water stream flowing from the forest above. Supremely happy, pretty grapes from vines that have earned elegance with age. Harvested by hand and then kept four weeks in concrete followed by one year in barrels. Nothing added, nothing removed. Rustic, wild, and free.

~2019 LA SYRAH DE LA PINEDE~

Relatively young 15-year-old Syrah vines, pruned for low yields in a plot that’s exposed on the North side and otherwise bordered by a forest of cypress and pine trees. The rich and diverse forest ecosystem lends to cooler soils which allow for a long hang time prior to harvest, usually until the end of September. Aromas of black olives and red berries are characteristic in this wine. The grapes are immediately destemmed upon arrival into the cellar, before a soft press.  A gentle hand in the cellar and utmost respect for the grape is essential here –  the wine was aged for 9-10 months in Bordeaux barrels which were used 6 times previously.

Cool soils create beautiful freshness, combined with  concentration of the South which will remind you that the sun is indeed there.  Fermented with indigenous yeasts, no inputs and no filtration.

Every year they blend the 3 wines, selected from their barrels, with the same proportions in order to obtain a photograph of the estate each vintage. The combination melds the power of Syrah, the freshness of Carignan and the velvety texture of Grenache, resulting in beautiful and balanced complexity. Fermented with indigenous yeasts, no inputs and no filtration.
