KAMARA WINERY, The Kitsoukis family has brought to life the now extraordinary Kamara vineyard and winery which is nestled on the Mygdonian hillside by Thessaloniki in Northern Greece. On their 11 hectares of land, the Kitsoukis are implementing the fine balance of honoring the ancient wine-growing traditions of their region with an ecological, sustainable vision. The outcome is superb, low intervention, pure, natural wines made from traditional Greek grapes. All Kamara wines are naturally fermented with indigenous yeasts, have no oenological substances added, and are bottled without filtration and no added sulfites. ~2021 ROSÉ PÉT-NAT ~
After halting primary fermentation, a blend of Assyrtiko, Malagousia, Xinomavro was brought down to a cool temperature and let to settle off of its primary lees. In the spring they added the fermented must of Xinomavro. Not disgorged, the wine is hazy, creating a broader palate weight, pleasing textures, and balance. This special bottling is done entirely by hand.

~2021 ORANGE PÉT-NAT~
Made of 100% Moschofilero, a traditional Greek white grape with intense aromatics reminiscent of Muscat. The wine was fermented on skins for 3 weeks in a mix of amphora, old oak vats and stainless steel tanks, with regular punchdowns, then pressed, blended and bottled while still fermenting.
Moschofilero grape shows its full potential for pleasure in this cloudy sparkling orange – tropical aromas and intense flower notes mingle with lemongrass and orange peel notes, slightly tangy touch and mouth-watering freshness.

~2021 NIMBUS ALBUS WHITE~
50% Malagouzia & 50% Assyrtiko. 3 months in old barrels. 12.5%. Bright golden colour with greenish highlights recalls the colour of fino sherry. Rich, intense nose, with all-natural flavours evolving. Stone fruits, lavender and chamomile. Perfectly harmonious with the acidity. The grapes are destemmed and the varieties ferment separately in stainless steel tanks with indigenous yeasts, no oenological substances added. Spontaneous malolactic fermentation.

~2021 STALISMA WHITE ~
80% Malagousia, 20% Xinomavro. Clay, loam, sand schist. The grapes are harvested manually. Malagousia was left on skins for 3 days, while the Xinomavro grapes were direct-pressed as blanc de noirs. When the fermentation finishes, the varieties are blended together and aged on their own fine-lees until spring, when it’s bottled without fining, filtration, or added sulfites. Bergamot-herbal aromatics of the shortly-macerated Malagousia is savvily combined with Xinomavro’s class and freshness.

~2021 SHADOW PLAY WHITE ~
100% Assyrtiko. 3 months in neutral barrels. Bright golden colour. Rich, intense nose which evolves minute after minute into the glass. This beautiful wine holds an intense banana aroma both in the nose and in the palate. It is creamy, round and balanced and also a bit oxidative and smoky. An amazing white with a lovely long finish.

Xinomavro, Merlot- & Syrah. Full-bodied with notes of orange bitters. blackberry, blueberry and cassis aroma combined with some herbal and earthy notes.Very firm tannins and medium acidity. 12 months in old French oak. Hearty, warm dark berries, plums and liquorice combined with notes of eucalyptus, black olives and intense black pepper. Notes of black and green pepper, cinnamon and nutmeg are complemented by fresh earthy notes and hints of dark chocolate.

~2020 SHADOW PLAY RED ~
100% Xinomavro. The aroma of this wine is mind-blowing, dark berry compote, black cherry, black olives as well as tobacco and prunes. The earthiness and awesome grippy tannins! It is a fantastic wine of rich dark red colour, with complex aromas of small red fruits, vanilla, plums, tomato and black olive. Full-bodied and long finish.

~2020 KERAMOS AMPHORA~
50% Xinomavro and 50% Limnio grapes were co-fermented and aged in amphorae, with 30 days of skin contact and whole cluster inclusion giving a rich tannin structure. After pressing, the wine spent 9 months ageing in the same vessels.
Earthy aromas and noticeable minerality. Dried plum, fig and a blend of herbs. In the mouth taste of maraschino cherry, black and red berries, intense tannins, band a touch of perfectly balanced VA.

Retsina is a famous traditional Greek wine enjoyed for at least 3000 years. Even in modern Greece the wine still represents the classic ubiquitous style.
