Welcome to the world of NON, loved by world-famous chefs, restaurants, bar owners, and self-proclaimed foodies from around the globe.

Founded by, Aaron Trotman, a foodie on a mission to create the future of drinks, NON is an intricate balancing act of flavour built from the ground up with key notes of floral, tannin, salinity & acidity and a bold, minimalist package. Each ingredient that goes into NON is individually processed. This process has been specially developed with only 3 people in the world who know exactly how we do it.

NON works with both local and international farmers and suppliers. This means we secure the highest quality ingredients, the variety of the fruit and vegetable may change over the seasons, but they are always chosen for top flavour, and peak seasonality.

Designed by a team of expert food & beverage professionals, we draw from a vast base of knowledge from all areas, ranging from chefs, bartenders, food scientists and winemakers.

BALANCED SWEET & SALTY. CHAMOMILE PROVIDES LINGERING TANNINS FOR A FLORAL FINISH. EFFERVESCENT. 

PROCESS

FRUIT: 48 HOUR COLD STEEP OF FREEZE-DRIED RASPBERRIES, SOURCED FROM TASMANIA, AUSTRALIA. FREEZE DRYING REMOVES THE 85% WATER MOLECULES FROM THE FRUIT, WHICH CONCENTRATES THE FLAVOUR. 

TANNIN: CHAMOMILE USED FOR TANNIN & CREAMY FINISH. RASPBERRY SKINS PROVIDE A SMALL AMOUNT OF TANNIN.

SALINITY: MURRAY RIVER SALT PROVIDE SALINITY AND CREATES A MOORISH SENSATION.

ACID: VERJUS FROM SEMILLON GRAPES FROM THE  BAROSSA VALLEY, AUSTRALIA. 

BALANCE: JUST LIKE THE KITCHEN, SUGAR USED TO BALANCE AT THE END DEPENDING ON THE NATURAL SWEETNESS OF THE RASPBERRIES.

BRIGHT, TART & BALANCED WITH A SAVOURY UNDERTONE. STILL.

FRUIT: 48 HOURS OF DEHYDRATING ORANGES REMOVES WATER MOLECULES, WHICH LEAVES THE CONCENTRATED ORANGE BEHIND CREATING  CARAMELISED & CANDIED ORANGE FLAVOUR. A 5 HOUR INFUSION OF PITH ADDS A BITTER COMPONENT AND ORANGE SKIN ADDS WAXY MOUTH FEEL THAT COATES THE PALETTE. YUZU IS A JAPANESE CITRUS, USED FOR ITS UNIQUE SHARP AND SOUR PROFILE. 

TANNIN: CINNAMON PROVIDES A LINGERING SPICE AND TANNIN ALONG WITH THE ORANGE SKINS.

FRUIT: CHERRY & SPICE MIX IS “STEWED” IN OVEN FOR 2 HOURS TO CREATE A JAM BLEND OF BLOOMED SPICES AND CARAMELISED CHERRIES.

TANNIN: COLD BREW COFFEE GIVERS A CHOCOLATE FINISH AND ADDS TANNIN.

SALINITY: MURRAY RIVER SALT PROVIDE SALINITY AND CREATES A MOORISH SENSATION.
