Long before Rathjen Cellars, there was the Wine Bunker—a cramped, unfinished basement that served as a training ground for the art and craft of winemaking. This aromatic blend of Ortega, Pinot Gris and Auxerrois grapes grown on the Saanich Peninsula pays tribute to these humble beginnings. The Wine Bunker White is part of our ongoing exploration into growing and making food-friendly wines that truly reflect our unique coastal climate.

~2020 PINOT BLANC~
The 2020 Pinot Blanc is grown on the southwest-facing slopes of Mount Newton Bench on the Saanich Peninsula. Following fermentation with wild yeast the wine was aged on lees for ten months in a combination of neutral French oak and stainless steel vessels. This vibrant and crisp wine is filled with notes of citrus and sea spray. An energetic wine suited for food stuffs from the coastal waters and farms.

~2021 PINOT GRIS~
The 2020 ‘Saanich Old Vines‘ Pinot Gris is made from 30-year-old vines grown at Brambleside vineyard and Mt Newton Bench vineyard on the Saanich Peninsula.
Fermented with wild yeast and aged sur lie for 10 months in neutral oak and stainless steel vessels.

Auxerrois from Dragonfly Hill Vineyard, self-rooted and planted in 1992/1993, the grape is a sibling of Chardonnay and originally hails from the Alsace region.
This was native fermented in neutral oak puncheons, where it remained on lees for 10 months, with no MLF and no bâtonnage. Green apple, green melon, wild pear run the tight, nimble and dry palate, finely creamy with a subtle white blossom perfume and zesty lemon acidity.

Dry-farmed at Saison Vineyard in the Cowichan Valley, our Pinot Noir is a blend of four Dijon clones originating from Burgundy, France. This elegant and age-worthy wine fermented with wild yeast in oak puncheons spent two years aging in neutral oak barrels and was bottled unfined and unfiltered. A true expression of varietal and place.
